Did someone say pumpkin? Did someone say cream cheese? I’m there! I am totally one of those people all over all things pumpkin during the fall season. I can’t get enough pumpkin sweetness and when paired with cream cheese I’m over the moon, y’all! Recently I tried a bit of pumpkin butter spread with cream cheese on a bagel and whoa. Inspired by that breakfast deliciousness I decided a pumpkin cream cheese pie recipe for fall entertaining was required. This recipe will be added to my cookbook and something I whip up for guests at Friendsgiving this year. If you haven’t started planning Friendsgiving I suggest you jump on that and get ahead of the game by at least having a date, time and location (which besties house) selected. Who’s coming over November 18th for our Friendsgiving? Grab this easy and slightly unique recipe below.
What makes this recipe unique in my opinion is the thickness of the cream cheese and my method of dropping dollops of it in the pumpkin pie batter. If you prefer less cream cheese you’ll want to blend well instead of dropping and stirring when creating this fall perfect pie.
- 2 cups of flour
- 1 tbsp pumpkin pie spice
- 1 tbsp baking soda
- 1 can of pumpkin puree
- 1 cup of sugar
- 1/2 cup of brown sugar
- 2 eggs
- 1 tbsp vanilla oil
- 1/2 cup of canola oil
- 1 package of cream cheese (8oz)
- 1 package of graham cracker crust (create per instructions)
- Preheat to 350.
- Mix dry ingredients
- Blend in wet ingredients
- Dice cream cheese
- Beat the cream cheese in the cake mixture (leave chucks if you prefer like I do, or puree for no large bites of cream cheese)
- Pour into graham cracker base
- Cook for 1 hour or until a fork goes through the pie without leaving dough
- Serve warm and enjoy!
